GRAN RESERVA
Robust, complex, and velvety in the mouth, Crudabendita is a delight to pair with grilled
ribeye, aged cheddar, truffle risotto, roasted duck, or beef bourguignon.
The process
Grapes for Crudabendita were handpicked from clean and clay-calcareous soils and came into the winery at a temperature under 50ºF, perfect to increase the extraction of polyphenols and aromas.
Grain selection was made by hand followed by a selective optical laser to get an immaculate selection finish: just the berry.
During the alcoholic fermentation, lees were in contact with the skins and removed using a patented batonnage system from the house, unique, to not damage that exquisitely selected grape. During this process the temperature never went up to 80.6ºF.
Ageing
Aged exclusively in natural oak, Crudabendita spent the first 13 months in 225L new French oak barrels, followed by another 25 months in 225L second-year American oak barrels, totaling 38 months in oak.
The wine is completed by being bottled and aged for at least 2 years before release.
